This farm raised, freshwater fish is one of the fastest-growing native species in aquaculture, reaching massive sizes in a relatively short timeframe growing up 14 feet long and weighing up to 400 pounds. By utilizing earthen ponds and monitoring water quality we ensure the fish grow in an environment that mimics their natural Amazonian habitat while maintaining strict safety standards.
The exceptionally clean, mild flavor (with none of the muddy or off notes) and naturally whiter flesh appearance of the meat are direct results of a highly controlled, carnivorous-specific diet and specialized handling. By using high-protein feeds tailored for this predatory species, we eliminate the yellowish hues often found in standard pellet-fed Paima previously introduced in the market. We ensure thick, uniform portions and high-yield loins that the market demands.
Fillet Characteristics
The Paiche fillet is exceptionally versatile, known for its firm and thick texture with a large flake, offering a mild flavor while remaining naturally moist and resistant to drying out. Both thick cut and center cut fillets develop an irresistible golden, caramelized crust when baked or seared, and can be prepared using almost any method for firm white fish, including grilling, roasting, baking, pan-searing, frying, or steaming.
