THAW PROPERLY
Refrigerator overnight is best. For quick thaw, seal in a bag and run cold water over it for 15 min. Never use a microwave.
PAT VERY DRY
Use paper towels to dry the fillet completely — especially the skin side. Moisture is the enemy of a crispy sear.
SEASON & SEAR
Salt + pepper the skin. Heat oil until shimmering. Lay skin-side down, press flat for 30 sec. Cook 4–5 min without moving.
FLIP & FINISH
Flip for just 1–2 min. Rest off heat. Finish with lemon, fresh herbs, and a drizzle of good olive oil. Done.
